Make Your Own Veggie Soup

If you haven’t noticed, I have been stuck at site for a while and on the weekends, cooking is something that is keeping me entertained. Therefore, I have another recipe for you! I was looking at soup in the local BigC and it was really expensive. It cost almost the same price to buy a Thai dish at a restaurant that it did to buy a can of soup.

So, I got creative. I researched a bunch on how to make soup and I think I came up with an easy plan. I have now made soup three times and it is awesome. Soup is something that is so easy to come home, warm up, and eat on a busy day or when I’m really tired.

This soup can be vegetarian or vegan. You can also add meat to make it not, but that’s up to you. First, you should find your ingredients. I usually use whatever is in my fridge or whatever is cheapest at the market. As long as you get the amount in, it doesn’t really matter what you put in.

I have gotten used to adding a lot of beans to my soup, which turns the color so it does not look the most appetizing. But, it has a lot of protein and it is super healthy. Because you can add so many vegetables, you can be sure to get your daily intake in one meal!

In the soup below, I added mushroom stock, kidney beans, black beans, green beans, onions, garlic, turnips, salt, pepper, and scallions. I cooked the beans first and then added in the stock because kidney beans take a long time to cook. I then added in all the veggies and simmered for about 30 minutes. I then took everything and put it into a blender to make to smooth and creamy. I got about 3 meals out of the one pot.
