Fusion Flatbread (VEGAN) Sandwich

One Sunday Morning at site, I awoke with absolutely no plans for the day (imagine that haha). As I laid in bed, I thought of possible options for my day of rest. Maybe I’d bike into town, get some coffee, play a little badminton with the kids. My wandering mind was suddenly brought back to reality with a crash of thunder. A quick gaze out my window at the pouring rain immediately altered my plans, I was staying home. My rumbling stomach sparked my creativity, and thus the Fusion Flatbread Sandwich was born. Below you will find the recipe. I am not one to measure. I make food based on taste and texture. The measurements below are guess-tamated. Feel free to make any alterations in accordance to your individual tastebuds.

The Patty

– Mashed black beans (1 c.)

– Lightly sautéed finely chopped mushrooms (1/2 c.), onions, green onion, cilantro, (1/4 c. each) garlic (4 cloves)

– Mix dry ingredients: breadcrumbs (3/4 c.), paprika (1 tbl.), cumin (1tbl.), salt (1/2 tsp), red pepper (1 tbl)

– Mix all ingredients

– Form patties and fry in a smidge of oil

– Or grill if you have that option


The “Bacon”

– Use a veggie peeler to thinly slice tofu into strips

– Make marinade of soy sauce (1/2 c.), sweet chili sauce (1/8 c.), all spice (1 tsp), cumin (1-2 tsp.), paprika (1 tsp), crushed red pepper (1tsp.)

– Let strips (and thinly sliced onions) set in marinade for 3 hours

– Fry in oil in pan

– Save marinade for topper


The Base Sauce (Nam Prik Makua)

– Mash cilantro, onion, green onion (1/4 c. each), garlic (3 cloves)

– Sauté eggplant (1/2 c.) in olive oil

– Mash all together with mortar and pestle

– Add a dash of salt and crushed pepper


The Flat Bread

– Mix flour, salt, baking soda, baking powder and a dash of sugar

– Add warm water and olive oil

– Mix and ball into dough

– Roll out and pan fry


The Topper:

Grated Green Mango!


ASSEMBLE:

– Flatbread, base sauce, “bacon”,shredded green mango, patty, marinated onions, mango, then marinade to top
